Back to School Recipes: 4 Easy Lunches and After-School Snacks

Back to School

Fuel for the first bell and beyond

4 Recipes

Back to school is equal parts relief and panic. Relief because the kids have somewhere to be besides my kitchen all day. Panic because suddenly we’re on a schedule again, and I realize in August that I have zero system for packing lunches.

So I meal prep. Hard. I’m the kind of mom who bakes cookies and makes soup and overnight oats on Sunday while listening to true crime podcasts. It’s my coping mechanism for the chaos that school brings. When the kids have good snacks and Jake can grab something that isn’t pizza rolls, everything runs smoother.

Maggie’s Back to School Tip

Sunday meal prep is the secret weapon. Make a big batch of soup, portion it into containers, and you’ve got lunches for the week. The quesadillas take fifteen minutes and the kids can help assemble them. And the sloppy joes? Freeze the meat sauce in quart bags—thaw one Tuesday evening when you’ve got nothing planned and zero energy.
