Slow Cooker Pot Roast Stew
Ingredients
- 3 pounds beef chuck roast cut into 2-inch chunks
- 1 pound baby potatoes halved
- 4 medium carrots cut into 1-inch pieces
- 1 large onion quartered
- 4 cloves garlic minced
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 whole bay leaves
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water

Season the beef chunks generously with salt and pepper. If you have time, brown them in a hot skillet with a tablespoon of oil for a better flavor. This is optional but worth it.

Place the potatoes, carrots, and onion in the bottom of a 6-quart slow cooker.
